Hungry Squirrel Keto Chinese Chicken Recipe

INGREDIENTS
DIRECTIONS
1. Wash all vegetables and set aside
2. Thinly slice chicken breasts into small strips, season with salt and pepper
3. On a stovetop, place a pan on medium, medium-high heat
4. Drizzle olive oil into pan, and add chicken strips
5. Cook for 8 minutes flipping strips half way through
6. Remove chicken from pan, set aside
7. Cut the stems off the bell peppers, and deseed
8. Cut the bell peppers into thin, vertical slices, set aside
9. Cut the snow peas diagonally into thin slices, set aside
10. Peel carrots, and cut into 1 and a half to 2-inch pieces, then cut off 4 sides to form a rectangle
11. Cut the carrot pieces into equal slices lengthwise
12. Stack the slices evenly, then cute through the stacks to form matchsticks, set aside
13. Thinly chop napa cabbage into fine strips
14. Cut the avocado in half, and remove pit. Slice into thin pieces
15. In a large bowl combine napa cabbage, cut chicken breast, sliced carrots, snow peas, bell peppers and avocado, then toss
16. Drizzle Hungry Squirrel’s Keto Chinese Dressing over the bowl while continuing to toss. Add as much or as little of the dressing as you’d like!
17. Additional add ins: Mandarin oranges, sliced almonds, sesame seeds, green onion
