Chef Notes:

The recipe might suggest mashed cauliflower, but why not be a rebel? Risa paired her loaves with a medley of cauliflower rice, earthy mushrooms, and crisp asparagus. The result? A symphony of juiciness, with the glaze playing the lead role in this meatloaf masterpiece.

Each bite of these keto-friendly wonders is a burst of savory goodness, amplified by the unique allure of Hungry Squirrel's Keto Tomato Ketchup. This ketchup isn't your average condimentā€”it's a game-changer. Made with allulose, a natural sweetener derived from fruit, it boasts no fat, zero cholesterol, and is both keto-friendly and kosher.

Bon appƩtit!

  2. Unleash your inner chef as you mix ground beef, onion, Worcestershire sauce, olive oil, eggs, garlic, ground pork rinds, salt and pepper together and nestle them into two greased 10oz square ramekins. Pop them onto the middle rack and let them bake for a glorious 25 minutes.

  3. While your mini marvels are getting their bake on, it's time to whip up the glaze:

  4. Once your meatloaves are baked to perfection, crank up the heat and switch your oven to broil. Take out your loaves, lovingly slather the glaze on top, and broil for another minute or two until the sauce forms a caramelized crown of yumminess.
